Potato soup

I just got home from a late evening shopping trip to find dinner simmering on the stove.  My husband made potato soup!  We have potato soup a lot because it doesn't really require a lot of ingredients, and the ones it does require aren't very expensive.  Yes, my kids didn't like it at first, but now they eat it without complaining.   My husband didn't know what recipe I usually use, so he just looked one up.  My daughter practically licked her bowl clean and said that daddy was the best soup maker in the family.  Fine by me!  This is the recipe he used (http://www.best-potato-recipes.com/cheesy-potato-soup-recipe.html):

4 cups potatoes, peeled and diced
1/3 cup onion, chopped  (he left the onion out, but added a 1/2 Tablespoon each of onion powder and garlic powder)
2 tablespoons butter
1/3 cup celery, chopped  (We had celery, but he wanted to use broccoli and carrots instead)
  3 cups chicken broth
2 cups milk
1 1/2 teaspoons salt  (He's watching his sodium, so he used just 1/2 t salt)
2 cups shredded cheddar cheese
Paprika, croutons and parsley for garnish (optional)  (He didn't use any of these)
When it was done, he felt like it needed a little something, so he added a couple dashes of cilantro.

Directions:

In a large cooking pot, melt butter over medium high heat. Sauté celery and onions in melted butter. Add diced potatoes and chicken broth.

Cover and simmer for about 12 minutes or until potatoes are tender.

Puree potato mixture in small batches in a blender or food processor and return to cooking pot. (If you don't have a blender, etc. you can mash the potato mixture with a potato masher or even with a fork.)

Stir in milk and seasonings. Add the shredded cheese and heat only until cheese is melted.

Place in serving bowls and garnish with paprika, croutons, and parsley.

Serves 6
